Grilled Peach and Asparagus Salad

I love a good salad, especially a summer salad with seasonal ingredients that can be served as a meal. The other day I was flipping through the pages of Canadian living and got a little inspiration from the ingredients rounding up a variety of summer recipes to make this delicious grilled Peach and Asparagus Salad.

Ingredients:

  • Blend of both Mixed Greens and Arugula
  •   3-4 Peaches grilled
  •   1 Bunch of Asparagus grilled and chopped
  •   Crumbled goat cheese
  •  200 grams of prosciutto
  •   ¼ cup of Sunflower seeds

Dressing:

  •   1 part balsamic Vinegar
  •   2 parts olive oil
  •   1 TBSP Dijon mustard
  •   1 TBSP of Honey
  •   Salt and Pepper to taste

Directions:

Grill Peaches and asparagus and set aside. In a large salad bowl, place greens, goat cheese and prosciutto.  Mix dressing ingredients in a small jar, shake and pour over salad. Add Peaches and asparagus, top with sunflower seeds, toss and eat.
