PB & Coconut Energy Bites

These little energy bites are so delicious you won’t even believe they’re healthy but they are!!!! In honour of my 30 days to healthy living group that started yesterday, these little nuggets are the ultimate craving cruncher. Healthy fats, gluten-free, energy packed, nutrient dense with vitamins and minerals (thanks to the vegan protein) and a burst of flavour… Yes please!! They’re perfect on the go for a power punch or as a little sweet treat when the mood strikes. Best of all, they take no time to prepare. Sweet & Simple.

Ingredients

  • 1 cup of Ground Oats (GF)

  • 1/3 cup of Natural Peanut Butter

  • 2 tbs of Coconut Oil (melted)

  • 2 Scoops Vanilla Protein Powder (I used Arbonne Essentials Vegan Protein)

  • 1/4 cup Shredded Coconut (unsweetened)

  • 2 tbs of Natural Maple Syrup or Organic Honey

  • Extra Coconut for rolling

*Add a bit of water if need be to get the right consistency to roll

Method

  • Mix all ingredients together in a large bowl

  • Spoon out portions and roll into balls

  • Roll in extra coconut

  • Store in the refrigerator in an air tight container
