Romantic Raspberry Rose Bites
Strawberries get all the love on Valentines don’t they? Year after year, strawberries and chocolate win the popularity vote by a landslide! Isn’t it time we let a new berry shine? Enter the raspberry and let’s kiss it with some coconut! This year I’m cheering for the underdog and these completely nut free, gluten free energy bites have winner written all over them. Perfect for your little ones lunch boxes or a peck on the go amuse-bouche just for you or your boo!
1 cup Frozen Raspberries
3/4 cup Gluten Free Oats
2 scoops of Vanilla Protein Powder
1/3 cup Unsweetened Shredded Coconut (plus more for rolling)
2 TBSP Coconut Oil (melted)
1 TBSP Chia Seeds
1 TBSP of Honey (use your favourite)
1/2 TBSP Fresh Lemon Juice
Pinch of salt
1 TBSP Water
1) Ground oats in food processor and melt coconut in a sauce pan or microwave.
2) Add all ingredients in food processor and blend until well blended
3) Using a TBSP or scoop size portion roll into balls with your hands.
4) Roll balls in extra coconut & store in an airtight container in the fridge.
