Dear friends,

THIS ain’t no snaccident!!

I have been planning to post a super thought-provoking and insightful post for weeks now but in all truth all I’ve been focused on this winter is yummy snacks so here we are with another healthier little munch. A spin on a crowd favourite, sweet potato meet guac, meet salsa, meet toast!

Super simple & loaded with beta-carotene, fiber, potassium + vitamins B6 & C, this gluten-free alternative to toast has completely replaced the nachos I used to make with wheat filled crackers and can honestly be topped in a million different ways. You are the master chef of your own sweet or savoury snack. Dare I say: ‘The sweet potato is your oyster’.

I now give you a little something I like to call: Nacho Average Toast!

What You Will Need

  • 1 Large Sweet Potato

  • Toppings of your choosing

  1. Nachos: Organic Salsa, cheese shreds I used Daiya Vegan Cheddar Shreds, chopped green onion or cilantro to top.

  2. Avocado Smash: 1 Large Avocado mashed into guac ( I make mine simple with salt, pepper & lime) add chili flakes to top and drizzle with extra virgin olive oil. Medium boiled or poached egg (optional)

  3. Sweet Treat: Organic almond butter, sliced fruit of choice, shredded coconut, hemp hearts, chia seeds to top and drizzle with pure maple syrup.

How to:

  • Preheat oven to 400 F

  • Slice sweet potato lengthwise (This was actually the hardest part). Cut in circles for more of an amuse bouche sharing plate.

  • Place on baking sheet and cook approx 10 minutes before flipping and adding nacho toppings if making nachos. Otherwise flip and cook another 5-10 mins. You can also toast in the toaster or toaster oven.

  • Top as desired

  • Serve, eat & enjoy!
